Authentic Japanese ramen technique brought to San Antonio through a partnership with one of the country's most respected ramen consultants — and served with Texas pride.

Bakudan Ramen began with a simple goal: bring real, authentic Japanese ramen to San Antonio — and do it honestly. We knew from the start that a great bowl of ramen isn't something you can fake. It takes years of study, repetition, and travel to master. So instead of pretending we had that background, we partnered with someone who does.

Our entire recipe — from the broth to the tare to the noodles — was developed by a renowned ramen consultant whose career is dedicated solely to this craft. He travels frequently to Japan, eats and studies at the country's most respected ramen shops, and brings that knowledge back to the few restaurants he chooses to work with. Bakudan Ramen is one of them.

When we opened our first location at The Rim, we did so with a recipe and a workflow built directly with our consultant — and a kitchen team trained on every detail. The community embraced us immediately, and what started as one restaurant grew into a beloved local institution, expanding to Stone Oak in October 2022 and to Bandera Road in February 2023.

Today, Bakudan Ramen stands as a testament to what's possible when Texas hospitality meets Japanese technique. Our team sources quality ingredients, simmers tonkotsu broth for 6½ to 7 hours every morning, and prepares noodles, chashu, and tare to the spec our consultant set — all so every bowl that leaves our kitchen lives up to the standard he taught us.

2018

Building the Recipe

Planning for Bakudan Ramen began in 2018. We partnered with our ramen consultant to develop the entire recipe — broth, tare, noodles, chashu, eggs, and finishes — and worked through many iterations together, drawing on years of travel and study at Japan's most respected ramen shops, until every element of the bowl was right.

May 2019

The Rim Opens

Bakudan Ramen officially opened its first doors at The Rim shopping center near La Cantera Parkway. The San Antonio community embraced our vision immediately, and we quickly became known for authentic Japanese ramen made fresh daily with premium ingredients.

October 2022

Expansion to Stone Oak

Due to overwhelming demand and community support, we expanded with our second location in Stone Oak along Highway 281, bringing the Bakudan experience to more of San Antonio while maintaining our commitment to quality and authenticity.

February 2023

Bandera Joins the Family

Our third location on Bandera Road opened, solidifying Bakudan Ramen as San Antonio's premier destination for authentic Japanese ramen. Three locations, one unwavering commitment to excellence.
